It’s getting colder…so let’s warm up…this is a sure-fire toasty & cozy meal for you. And it’s delicious!! The original recipe came from my pal Kim H., who got this off a Facebook board. Of course, I’ve modified it a bit…
2 Tbsp butter
3 cloves garlic, chopped
2 (28 oz) cans crushed tomatoes
1 can chicken broth
1 16 oz. jar roasted red bell peppers, drained
1 Tbsp sugar
1 envelope Zesty Italian dressing mix
2 cups FAT FREE half and half
1/4 tsp ground red pepper
1/4 tsp freshly ground black pepper
Melt butter in saucepan on stove. add garlic, and saute 1 minute. Stir in tomatoes and next 4 ingredients.
Cook and stir over med heat for 20 minutes.
Stir in half and half and cook low heat til thoroughly heated.
2 tbsp. chive & onion cream cheese
1/3 c. mayo
Beat with mixer
Stir in 4 oz shredded Mozzarella
and 4 oz shredded Cheddar
1/2 tsp garlic powder
1/8 tsp seasoned salt
kristel wyman - i made the soup tonight, it was delicious! i made it with some salmon (with a mango-mint salsa), broccoli, and roasted potatoes with bacon and sour cream. i'm soooooo full!! and the soup recipe really makes a lot, and was so simple. thanks for the recipe!
